Make Fat Tuesday Work For You With Our Lemon King Cake Cookies

You don’t even have to load up on tons of sugar and carbs, all you need to do is have a couple baking sheets, some mixing bowls, the right ingredients and a stove and you can bring the magic of Mardi Gras into your home! Ingredients

LEMON KING CAKE COOKIES

GLAZE

SPRINKLES

  • 1/4 cup shredded coconut, unsweetened
  • food coloring
  • water

Method

  1. Preheat the oven to 170 degrees F.
  2. Separate the coconut into 3 different bowls and add 1-2 drops of purple food coloring to one bowl, green into the next, and yellow into the third bowl along with 1-2 drops of water.
  3. Mix well and transfer the coconut to a baking sheet.
  4. Bake for 10 minutes, and let cool.
  5. Change the oven temp to 350 degrees F and prepare a baking sheet with parchment paper. Cut the bar into small pieces and place them on the baking sheet.
  6. Bake for 5 minutes and let cool completely.
  7. Place the bar pieces into a food processor and blend until small crumbles form.
  8. Add in the dry cookie ingredients and blend until combined.
  9. Add in the wet ingredients and blend until a dough forms.
  10. If dough is too dry, add 1 tablespoon of water.
  11. Separate the dough into 10 evenly sized balls and place them on the baking sheet.
  12. Bake cookies for 8-10 minutes until golden brown and let cool.
  13. Stir together the glaze and drizzle over the cookies before topping with the colored coconut sprinkles
  14. Celebrate!
